Sevilla ("seh-bee-yah") is not a city that does things quietly. It’s hot, lively, a bit dramatic! Life happens outdoors, food is a social event, and nobody seems remotely stressed about time.
Some of Seville's must-see sights include the Real Alcázar which is a palace, packed with intricate tiles, leafy courtyards and gardens you’ll want to wander around all day. Next door, Seville Cathedral is enormous — so big it feels slightly excessive — and inside you’ll find the tomb of Christopher Columbus. If you’re feeling energetic, climb La Giralda for excellent views across the city.
Then there’s Plaza de España, which is a grand, elegant square that has sections dedicated to different parts of Spain. It’s perfect for a slow stroll, a sit-down in the shade and a few 'wow' photos. Then head into Barrio de Santa Cruz, where narrow streets, orange trees and hidden squares make getting lost part of the experience.
The food! Local favourites include espinacas con garbanzos (spinach with chickpeas) and solomillo al whisky. This dish is made up of pork tenderloin medallions in a rich, garlicky sauce made with brandy (or whisky), olive oil, and lemon juice, often served with fries or bread to soak up the sauce. Despite its name, the sauce traditionally uses brand but is called "whisky" sauce, possibly due to historical links between sherry barrels and whisky production in Andalusia.
Seville isn’t about rushing from sight to sight. It’s about enjoying the surroundings and eating amazing food, with a few drinks in-between!
